As a busy mom with one adventurous eater and another who prefers things a bit more plain, I’m always on the lookout for dishes that balance gourmet appeal with simplicity. This Mediterranean salmon is my go-to solution, bringing vibrant flavors to the table while satisfying both of my daughters' different taste buds.


The star of the dish is a delectable topping made from juicy grape tomatoes, fragrant garlic, and tangy capers, all drizzled with balsamic vinegar. I like to season the fresh salmon fillets with salt and pepper, then generously spoon this colorful mixture right on top before baking. The result? A beautifully roasted salmon that is infused with a depth of flavor that even my picky eater can appreciate.


To add a touch of elegance, I serve the salmon over a bed of sautéed garlic spinach—a nutritious and delicious complement. I finish it off with a sprinkle of fresh basil to brighten the dish.


What I love most about this recipe is its adaptability. If my daughters’ preferences vary from day to day, I simply roast a plain piece of salmon alongside the topped fillets. This way, everyone gets a meal they enjoy, and I can still create something that feels special and gourmet for those of us craving a little more flair. This healthy weeknight recipe comes together in under 30 minutes, making it an easy choice for busy evenings while keeping everyone at the table happy.


Ingredients


  • 4 salmon filets

  • 1 pint grape tomatoes halved or quartered depending on size

  • 1 garlic clove minced

  • 1 heaping tablespoon of capers

  • 1 TLBS balsamic vinegar

  • 2 TLBS extra virgin olive oil

  • 6 basil leaves (chiffonade)

  • salt and pepper to taste


Directions


Heat Oven to 425°


In a bowl combine tomatoes, garlic, capers, balsamic vinegar and olive oil. Add one large pinch of salt and freshly ground pepper to taste and mix well.


Generously salt and pepper salmon fillets. Drizzle lightly with olive oil. Place salmon filets on a cookie sheet or baking dish and top with tomato mixture.


Bake between 10 and 15 minutes depending on your desired doneness or until internal temp in 140°.


To add extra nutrients and color, sautee one to 2 bags of spinach leaves in tsp of olive oil. Add salt and pepper and stir until wilted. Place salmon on top of spinach and serve.
