The star of the dish is a delectable topping made from juicy grape tomatoes, fragrant garlic, and tangy capers, all drizzled with balsamic vinegar. I like to season the fresh salmon fillets with salt and pepper, then generously spoon this colorful mixture right on top before baking. The result? Ingredients
4 salmon filets
1 pint grape tomatoes halved or quartered depending on size
1 garlic clove minced
1 heaping tablespoon of capers
1 TLBS balsamic vinegar
2 TLBS extra virgin olive oil
6 basil leaves (chiffonade)
salt and pepper to taste
Directions
Heat Oven to 425°
In a bowl combine tomatoes, garlic, capers, balsamic vinegar and olive oil. Add one large pinch of salt and freshly ground pepper to taste and mix well.
Generously salt and pepper salmon fillets. Drizzle lightly with olive oil. Place salmon filets on a cookie sheet or baking dish and top with tomato mixture.
Bake between 10 and 15 minutes depending on your desired doneness or until internal temp in 140°.
To add extra nutrients and color, sautee one to 2 bags of spinach leaves in tsp of olive oil. Add salt and pepper and stir until wilted. Place salmon on top of spinach and serve.
