Courtney's Zesty Summer Chicken

I'm all about the zesty when the weather heats up! I've got by favorite Zesty Summer Shrimp that I love to grill during warm nights and now I've created a simple and delicious grilled chicken recipe that is none other than, might I say, zesty!

Why it's on our list


During the summer moths I like to keep my menus light, healthy and packed with fresh herbs and citrus flavors. I created this simple grilled chicken with those summer flavors in mind. The sweetness of the honey and balsamic vinegar paired with the tartness of the lemon zest pack a punch with every bite and gets you that "zesty" flavor I love so much!. The sprinkle of fresh parsley enhances the freshness of the dish and makes it even more beautiful for serving. Perfect for a summer bbq!


Ingredients


Serves 4

  • 1 to 1.5 lb boneless skinless chicken breasts

  • 1 TLBS Cavendar's Greek Seasoning

  • 2 tsp dijon mustard

  • 1/4 cup balsamic vinegar

  • 1/4 cup extra virgin olive oil

  • zest of 1 lemon

  • 2 cloves garlic minced

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper

  • 1 TLBS fresh Italian parsley chopped


Directions


Combine all of the ingredients (except chicken) in a bowl and whisk to combine. Add chicken breasts to marinade, cover and refrigerate for 2 hours or overnight.


Remove chicken from refrigerator 30 minutes prior to grilling.


Preheat grill to 400°


Grille chicken breasts 6 to 8 minutes per side depending on thickness. Remove chicken from grill once internal temperature reaches 160°. Let chicken rest for 10 minutes. You can serve whole breasts or when serving a crowd, I like to slice against the grain into 1.5" strips, arrange on platter and sprinkle with Italian Parsley. Serve!
