Momma Chi Chi's Taco Soup

This chili-esque soup was a childhood favorite for brothers Alex, Kyle, and Jordan Rasch. Growing up in the very small town of Mascoutah, Illinois, these brothers spent their time between their grandparents farm and their childhood home merely one stoplight away. Food played a huge role in the upbringing of these mid-western brothers and their extended family, where a huge Sunday Supper cooked by grandma took place every weekend at the family farm, no matter what.
On Halloween, however, Momma Chi Chi got to shine when she hosted the entire family at her home in "town" and always served her famous Taco Soup with a side of peanut butter and white bread. It might sound like a Halloween trick but the Rasch brothers swear this unlikely pairing is actually a real treat! Jordan likes to spread his peanut butter on the bread, place it at the bottom of the bowl and pour the soup on top. Alex and Kyle prefer dunking their peanut butter sandwiches in the soup in a more civilized manner.
However you take your taco soup, we're not mad at ya! In our Hey Sis, Eat This opinion, the Taco Soup stands alone and certainly does not need anything else to make it delicious. We enjoyed simply topping ours with a little shredded cheese and sour cream but you be the judge. It really is a great dish for a fall or winter night and comes together easily.

Ingredients
2 lbs ground beef
1 can whole kernel corn
2 cans stewed tomatoes or Ro-Tel tomatoes & chilis
2 1/2 cups water
1 large onion chopped
1 can kidney beans
1 can pinto beans
1 small can diced green chilis
1 package taco seasoning
1 package Original Hidden Valley Ranch Dressing mix
Directions
Brown ground beef and drain liquid. Add all of the other ingredients and simmer 20 to 30 minutes. Serve hot with corn bread, tortilla chips, and or shredded cheese or white bread and peanut butter.
