Savory Sweet Potato Gratin with Thyme

Neither of the sisters have been fans of sweet potatoes, and when Whitney called Courtney one day raving about this new Panty Dropper sweet potato recipe she tried, Court blew her off. Finally, Whitney made it while Court was visiting and she immediately became a convert. Her kids even liked it! Now, it’s a staple for weeknight meals and dinner parties! It’s easy, elegant and is the perfect balance of flavors!


Ingredients


Serves 4-6 as a side

  • 2 sweet potatoes, peeled and sliced

  • 2 teaspoons minced garlic

  • 1 tablespoon olive oil

  • 2 tablespoons butter, melted

  • ½ cup grated Parmesan cheese + more for sprinkling on top

  • 1/2 teaspoon fresh cracked pepper

  • 1/2 teaspoon Italian Seasoning

  • ¼ teaspoon red chili flakes

  • Fresh Thyme stems


Directions:


Preheat your oven to 400ºF (200ºC). Peel and cut sweet potatoes into ¼ thin slices.


Place the sweet potato slices in a resealable bag. Throw in the garlic, oil, butter, salt, pepper, Parmesan cheese, and Italian seasoning and shake until well coated.


Lightly butter a baking dish and arrange coated sweet potatoes into a spiral. Place fresh thyme stems with leaves on top of potatoes and more parmesan.


Bake sweet potatoes for 35-40 minutes until cooked through. Stick a knife in a few to test. Once cooked through, remove thyme stems, turn on the broiler and broil potatoes until you see dark brown brown, caramelized spots on top. Watch closely!! Don’t want a Burnie Sanders sitch. Once dark to your desire, serve warm!
