Smoked Salmon on Cucumber Rounds

Whenever I entertain people, which is quite frequently, I always have a little nosh waiting on my counter for guests to enjoy when they arrive. I typically have a cheeseboard or some type of crostini but lately I've been loving the freshness of Persian cucumber rounds topped with a zesty cream cheese mixture and topped with smoked salmon and fresh dill. This dish not only tastes incredible but looks impressive and is a light, low carb bite that won't fill you up before the main meal.
Ingredients
For the Cream Cheese Mixture:
1/2 cup of cream cheese
3 TLBS of creme fraiche
1 TLBS finely minced shallot
1 tsp kosher salt
1/4 tsp fresh cracked black pepper
zest of 1 lemon
For the Rounds:
2 to 3 Persian cucumbers
6 to 8 oz smoked salmon chopped finely
Sprigs of dill for garnish
Trader Joe's everything bagel seasoning (optional)
Directions
With a hand held electric mixer, combine cream cheese, creme fraiche, shallot, lemon zest, salt and pepper until smooth.
Cut cucumbers in 1/4" rounds and place on serving platter
Using a spoon or pastry bag, top cucumber rounds with cream cheese mixture. Next, place smoked salmon on top of cream cheese, sprinkle with chopped dill and douce heavily with everything bagel seasoning. Serve!
