Whitney's Lemon Ice Box Pie

This was the first recipe Whitney ever learned how to make when she attended a childhood day camp about cooking when she was 5. The Ashley family has been making it ever since! It’s so simple but tastes luscious, lemony, and divine!
Ingredients
You’ll get 8 slices
4 ounces frozen pink lemonade concentrate (typically comes in a 6oz can. Use the other two ounces to make a cocktail)
1 (14-ounce) can sweetened condensed milk
1 (8-ounce) container frozen whipped topping, thawed
1 (9-inch) store-bought or homemade graham cracker pie shell
Zest of 1 lemon
Topping (optional but highly recommended)
1 cup heavy whipping cream
1 tablespoon powdered sugar
Zest of 1 lemon
Directions
With an electric mixer or standing mixer, beat together the lemonade, zest of one lemon and condensed milk.
Once that comes together add the whipped topping to the mixer and beat until incorporated
Pour the mixture into the graham cracker pie crust. Cover and freeze overnight or at least 12 hours.
For The Topping
In a large bowl using a hand mixer, beat the whip cream until stiff peaks are just about to form. Add in the lemon zest and sugar until peaks form. Pour over the pie and smooth out with a rubber spatula. Cover and freeze overnight or at least for 12 hours.
Take the pie out of the freezer about 15 minutes before serving time to ensure easy cutting. Enjoy!
